I was craving dessert one evening and decided to make do with what I found in the cupboard. The boys’ great-grandmother often treats them to individual jars of peaches, pears and apple purée, and I had a couple of each on hand — that’s how this simple baked fruit crumble came together.
INGREDIENTS
1 cup canned pears, cubed
1/2 cup canned peaches, cubed
1/3 cup apple purée
2 tbsp custard powder
1 cup fruit & nut muesli
25 g butter, melted
2 tbsp brown sugar
1/4 cup shredded coconut
METHOD
- In a small bowl, combine the pears, peaches and custard powder, stirring until the pieces are evenly coated.
- Divide this fruit mixture among four ramekins, or spread it into a single small baking dish for a larger serving.
- Spoon the apple purée over the fruit in each ramekin so it covers the surface evenly.
- Melt the butter in short bursts in the microwave (about 20–30 seconds) or on the stovetop.
- In another bowl, mix the muesli, brown sugar and shredded coconut until well combined.
- Add the melted butter to the dry mixture and stir until the muesli is evenly moistened and crumbly.
- Scatter the crumble mixture over the fruit, pressing lightly so it holds together.
- If using individual ramekins, place them on a baking tray for easier handling.
- Bake in a preheated 180°C (350°F) oven for about 30 minutes, or until the topping is golden and the fruit is bubbling at the edges.
- Remove from the oven and allow to cool for 10 minutes before serving.
Serve warm with custard or vanilla ice cream for added indulgence.
