Air Fryer Taco Stuffed Peppers — a low-carb twist on classic stuffed peppers. These are filled with seasoned ground beef, diced tomatoes with chiles, and Pepper Jack cheese. They cook in the air fryer in about 15 minutes, making them ideal for a quick weeknight dinner.

Traditional stuffed peppers often include rice, but omitting the rice keeps the same bold flavors with far fewer carbs. These taco-style peppers capture the flavors of tacos without a shell — spicy, savory, and satisfying.
The air fryer is perfect for this recipe: it cooks much faster than a conventional oven. While stuffed peppers typically bake for about 45 minutes in the oven, the air fryer finishes them in roughly 15 minutes. That makes this dish fast, convenient, and great for busy evenings.

Tips for Making Air Fryer Taco Stuffed Peppers
- Choose red, orange, or yellow bell peppers if you prefer a sweeter flavor and brighter presentation.
- Brown the ground beef and onion in a skillet before filling the peppers. The filling can be prepared a day ahead, and peppers can be stuffed and refrigerated until ready to air fry.
- Pepper Jack cheese adds mild heat. For more spice, use a hot variety of diced tomatoes and green chiles.

Instructions
- Add the ground beef and chopped onion to a nonstick skillet over medium-high heat. Break the beef apart and cook until no pink remains.
