If you prefer milder poppers, swap pepper jack for a milder cheese such as cheddar or Monterey Jack and leave out the sriracha and cayenne. For more heat, keep jalapeño seeds, add extra sriracha or cayenne, or sprinkle in red pepper flakes.

  • 8 oz. cream cheese, softened
  • 2 cups shredded pepper jack cheese (or your preferred cheese)
  • 3 jalapeños, seeded and diced (keep seeds for extra heat)
  • 1/4 cup chopped crispy bacon
  • 2 tablespoons sriracha sauce (optional)
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1/2 cup panko bread crumbs
  • 1/2 cup plain bread crumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/4 teaspoon coarse salt
  • 1/4 teaspoon black pepper
  • 4 cups oil for frying (peanut, canola, or vegetable oil)

How spicy are these?

These bites are mildly spicy by default. To tone down the heat, omit sriracha and cayenne and use a milder cheese. To increase the heat, add jalapeño seeds, more sriracha or cayenne, or red pepper flakes.

Can I make them in an air fryer?

Yes. Lightly coat the air fryer basket with cooking spray and preheat to 400°F. Place the coated bites in the basket and air-fry 10–12 minutes or until golden and crispy.

Substitutions and add-ins

These poppers are adaptable. Try adding crumbled chorizo, sliced green onions, diced bell peppers, or shredded chicken. Different cheeses also work well — cheddar, Monterey Jack, or Havarti are all tasty options.

Make-ahead, storage, and reheating

You can prepare the popper balls up to 2 days ahead and keep them in the freezer. When ready to cook, roll them in flour, eggs, and the breadcrumb mixture, then fry as directed. Instructions

  1. In a large bowl, use an electric mixer to combine the softened cream cheese, shredded pepper jack, diced jalapeños, chopped bacon, and sriracha until well mixed.
  2. Using a tablespoon-sized scoop, form the mixture into balls. Place them on a baking sheet and freeze for 30 minutes to firm up.
  3. Prepare three shallow bowls: one with the flour, one with beaten eggs, and one with the breadcrumb mixture (combine panko, plain breadcrumbs, garlic powder, cayenne, salt, and pepper).
  4. Heat oil in a large pot over medium heat to about 365–375°F. Test the oil by dropping a pinch of flour in — it should sizzle and rise to the surface.
  5. Remove the chilled cheese balls from the freezer. Dredge each ball in flour, dip in beaten egg, then coat thoroughly with the breadcrumb mixture.
  6. Fry several bites at a time for about 30 seconds or until golden brown. Remove with a slotted spoon and drain on paper towels.
