Each January, while people around the world often start detoxing after the holidays, the French prepare another special treat: the galette des rois. Traditionally made from puff pastry filled with a rich frangipane (almond cream), it is wonderfully indulgent. For this recipe we created a lighter, fruit-forward version: a caramelized apple galette sweetened with organic honey and caramelized apples for extra depth.

We used honey to balance sweetness and add floral notes. The result is a flaky tart that isn’t overly sweet, with clear honey and apple flavors in every bite. The caramelized apples provide a soft, tender texture and rich caramel notes that pair beautifully with the pastry.

For this version we used Spotted Gum honey, a type of eucalyptus honey with a rich, creamy flavor. It added a distinct, aromatic character to the galette. Spotted Gum honey pairs especially well with caramelized fruit, giving the tart a subtle, complex finish.

Description

Learn to make a French classic revisited — a galette des rois filled with caramelized apples and honey for a lighter, aromatic tart.


Ingredients

  • 3 apples, peeled and cut into 12 wedges
  • 1 sheet puff pastry
  • 2 tbsp honey
  • 2 tbsp sugar
  • 1 tbsp cream
  • 5 g butter
  • 1 egg yolk

Instructions

  1. Heat the honey and sugar in a frying pan or tart tatin pan over medium heat.
  2. When the mixture begins to caramelize, add the cream and stir to combine.
  3. Add the apples and butter, then cook over low heat for about 12 minutes so the apples soften.
  4. Increase the heat to medium and cook for an additional 5 minutes until the apples develop a caramelized glaze.
  5. Remove from heat and let the apples cool to room temperature.
  6. Preheat the oven to 390°F (200°C).
  7. Cut two 6 inch (15 cm) circles from the puff pastry.
  8. Arrange the cooled apples on one pastry circle, then cover with the second circle.
  9. Press the edges together firmly to seal the galette.
  10. Use a knife to score a decorative design on the top of the tart.
  11. Brush the surface with the egg yolk for a glossy finish.
  12. Bake for 10 minutes at 390°F (200°C), then lower the temperature to 340°F (170°C).
  13. Continue baking for 15–20 minutes until the galette is golden brown and puffed.
  14. Serve warm or at room temperature.
