Creamy Fiesta Ranch Dip is a crowd-pleasing chip dip that’s quick to prepare and perfect for parties. Smooth, tangy sour cream blends with ranch seasoning, beans, corn, and seasoned tomatoes for a flavor-packed dip that keeps everyone coming back for more.

Fiesta Ranch Dip
This creamy Fiesta Ranch Dip is ideal for backyard barbecues, game days, holiday gatherings, or Cinco de Mayo celebrations. It uses a dry ranch seasoning packet (or a homemade ranch blend) mixed into sour cream, then folded together with corn, black beans, Rotel (seasoned diced tomatoes), and shredded sharp cheddar for a bright, satisfying dip. Serve with tortilla chips, corn chips, or fresh veggies.

Ingredients:
- 16 ounce container sour cream
- 1 packet ranch seasoning mix (dry) or an equivalent homemade ranch seasoning
- 15 ounce can corn kernels, drained
- 15 ounce can black beans, drained and rinsed
- 10 ounce can Rotel (seasoned diced tomatoes), drained
- 1 cup shredded sharp cheddar cheese
- Optional: sliced green onions or fresh cilantro for garnish
- Chips or fresh veggies for serving
- Make it a veggie dip by serving with bell peppers, celery, cherry tomatoes, or cucumber slices.

Instructions:
In a large mixing bowl, stir the sour cream and ranch seasoning together until smooth and well combined. Drain the corn, black beans, and Rotel to remove excess liquid. Fold the drained corn, beans, Rotel, and shredded cheddar into the sour cream mixture until everything is evenly distributed.

Recipe Tips
- You can prepare the dip the night before; cover and refrigerate, then add garnish just before serving.
- Store leftovers in an airtight container in the refrigerator for 3–5 days.
- For more heat, stir in a pinch of cayenne pepper or finely diced jalapeño.

Cover the dip and chill it in the refrigerator until you’re ready to serve. Before presenting, transfer the dip to a serving bowl and garnish with sliced green onions or cilantro. Serve with your favorite chips or a platter of fresh vegetables.

Substitutions
- Use freshly cooked corn instead of canned for a sweeter texture.
- Swap regular canned corn for Mexican-style canned corn to add extra flavor and color.
- If using prepared ranch dressing instead of dry mix, reduce the sour cream by 1–2 tablespoons to prevent the dip from becoming too thin.
