Honey Sesame Salmon Kebabs

Ingredients

  • 2 lbs skinless salmon filet
  • ¼ cup raw honey
  • 4 cloves garlic pressed
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons toasted sesame oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika
  • Black and white sesame seeds optional
  • 10 wooden skewers soaked in water for at least 30 minutes

Instructions

  • Preheat the oven to 400°F (200°C).
  • Cut the salmon into 1-inch cubes.
  • In a small bowl, whisk together honey, pressed garlic, lemon juice, toasted sesame oil, paprika, salt and pepper until smooth.
  • Place the cubed salmon in a large resealable bag and pour in the marinade. Press out excess air and seal the bag.
  • Gently massage the bag so each piece is coated. Let the salmon marinate at least 15 minutes, up to 2 hours for more flavor.
  • Thread the salmon onto soaked wooden skewers and arrange them on a parchment-lined baking sheet.
  • Bake for about 10 minutes, until the salmon is opaque and just cooked through. Avoid overcooking to prevent dryness.
  • If desired, sprinkle with black and white sesame seeds. Serve immediately over steamed rice, quinoa, or with steamed vegetables.
