
Last year I found a quiche-stuffed bagel recipe I enjoyed, but my kids are hit-or-miss with quiche. I adapted it into a pizza-stuffed bagel version, and it was an immediate hit with them.
Traditional pizza bagels often suffer from toppings sliding off the surface. By stuffing the filling inside the bagel, the toppings stay put and the result is neater and less messy. Feel free to add chopped pepperoni, cooked sausage, or other favorite mix-ins to customize these for your family.

Stuffed Bagel Pizza

Ingredients
- 3 plain bagels
- 2 eggs
- 1/3 cup pizza sauce
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
Instructions

Position the oven rack in the middle and preheat the oven to 375°F (190°C).

In a bowl, beat the eggs. Stir in the pizza sauce, mozzarella, and cheddar until combined.

Slice the bagels in half. Using your fingers, remove some of the soft center from each half to create a hollow for the filling. Save any removed crumbs to make croutons later if you like.

Spoon the pizza-egg mixture into the hollowed centers of the bagel halves, distributing it evenly.

Arrange the stuffed bagels on a baking sheet and bake for about 20 minutes, until the filling is set and the cheese is melted and lightly golden. Let cool briefly before serving.
