Crispy Air Fryer Fish Sticks Recipe

These air fryer fish sticks are golden, crispy, and easy to make. They’re a healthier, tastier take on a childhood favorite. Use any mild white fish—cod, pollock, haddock, halibut—or even salmon if you prefer. Make extra: they freeze and reheat well.

Before air fryers, homemade fish sticks meant deep-frying (messy) or baking (fine, but often dry). These air fryer fish sticks are the best of both worlds: crunchy on the outside, flaky on the inside, and made with just a few pantry staples. I also include a quick lemony tartar sauce — optional, but highly recommended.

Why You’ll Love Air Fryer Fish Sticks

  • Less sodium than many frozen options — you control the seasoning.
  • Made with whole fillets you can identify and trust instead of a processed blend.
  • Less mess than deep-frying — the air fryer delivers crisp results without the grease.

Ingredients & Modifications

Bowls of ingredients for breading the fish sticks as well as unbreaded, uncooked fish sticks in a serving board.

Ingredients

  • Skinless, boneless white fish fillets — cod, pollock, haddock, or halibut work well. Salmon can be used for a richer flavor.
  • Panko breadcrumbs — for extra crunch; regular breadcrumbs or Italian-style crumbs are fine alternatives.
  • Seasonings — garlic powder, onion powder, paprika, salt, and pepper to flavor the crust and complement mild fish.

Complete recipe with measurements appears in the recipe card below.

Swaps

  • Italian breadcrumbs can replace panko for a finer crust.
  • Extra flavor like Old Bay, grated Parmesan, or dried herbs can be added to the breadcrumbs.

How to Make Air Fryer Fish Sticks

Cooked fish sticks in an air fryer basket.

Step 1: Make the lemon tartar sauce (optional)

Whisk together mayonnaise, chopped dill pickles, a splash of pickle brine, chopped fresh dill, lemon juice, and a little Worcestershire sauce. Cover and chill — it tastes better after a short rest.

Step 2: Preheat the air fryer

Preheat to 375ºF so the basket is hot when the fish goes in for maximum crispness.

Step 3: Prepare the fish

Pat fillets dry, season with salt and pepper, and cut into strips about 1/2″ wide and 2–4″ long. Set up a dredging station with flour, beaten eggs, and seasoned panko in separate shallow bowls. Dredge each strip in flour, then egg, then breadcrumbs, and arrange on a baking sheet.

Step 4: Air fry

Lightly grease the air fryer basket and place fish sticks in a single layer without touching. Cook at 375ºF for about 6 minutes, flipping halfway through, until the crust is golden and the fish flakes; target an internal temperature around 145ºF. Cook additional batches as needed.

What to Serve With Air Fryer Fish Sticks

  • Dips — lemon tartar sauce, ketchup, or a simple aioli.
  • Fries — fries, roasted mini potatoes, or air-fryer fries make a classic pairing.
  • Pasta — a cool lemon-dill macaroni salad for warm months or mac and cheese for comfort food.
  • Veggies — a crisp salad, roasted broccoli, or Parmesan-roasted zucchini balance the meal.
  • Tacos — use the fish sticks in soft tortillas with slaw for quick fish tacos.

Storage, Freezing, & Reheating

  1. Store cooled fish sticks in an airtight container in the refrigerator for up to 3 days.
  2. Reheat in the air fryer for a few minutes to restore crispness rather than using the microwave.
  3. To freeze, cool completely, flash-freeze in a single layer on a baking sheet for about an hour, then transfer to a freezer-safe container for up to 3 months.
