Ingredients

  • 1 package active dry yeast (1/4 oz.)

  • 1 cup warm water

  • 2 Tbsp softened butter

  • 1 Tbsp brown sugar

  • 1/2 tsp salt

  • 2 1/2 cups all-purpose flour

  • Large pot of boiling water

  • 1/4 tsp baking soda

  • 4 Tbsp melted butter

  • 1 cup sugar

  • 2 Tbsp cinnamon

  • Cream Cheese Dipping Sauce
  • 8 oz softened cream cheese

  • 1/4 cup heavy cream

  • 3/4 cup powdered sugar

  • 1/4 tsp vanilla extract

Directions

  • In the bowl of a stand mixer, add warm water and sprinkle the yeast on top. Stir gently and let the yeast dissolve and foam for about 10 minutes.
  • Once foamy, add the softened butter, brown sugar, salt, and 2 cups of flour. Using a dough hook, mix on medium-low until the dough begins to come together.
  • Add the remaining flour and continue mixing until the dough pulls away from the sides of the bowl and is no longer sticky.
  • Place the dough in a lightly greased bowl, cover with a damp towel, and let it rise for about 20 minutes or until doubled in size.
  • Punch the dough down to release air pockets and divide it into 8 equal parts.
  • Using the palm and heel of your hand, roll each piece into a 12″ rope. Do not flour your surface — flour prevents the dough from stretching properly.
  • Cut the ropes into 1″ pieces with a pizza cutter or sharp knife.
  • Grease baking sheets or line them with parchment paper and preheat the oven to 400°F (200°C).
  • Par-boil the pretzel bites: bring a large pot of water to a boil and add the baking soda. The baking soda bath creates the classic chewy crust.
  • Drop the pretzel bites into the baking soda bath in batches and leave them for 1 minute. Remove with a slotted spoon and transfer to the prepared baking sheets.
  • Bake until golden brown. Remove from the oven, let cool for 10 minutes, then brush with melted butter.
  • Immediately toss the buttered pretzel bites in the cinnamon-sugar mixture to coat evenly.
  • Serve warm with the cream cheese dipping sauce.

  • In a medium bowl, combine the softened cream cheese, heavy cream, powdered sugar, and vanilla. Beat with a hand mixer until smooth and creamy.
