Grandma Gwen’s Bacon and Cheese Omelet Recipe—Classic Egg Omelet

I’m back with another tasty recipe: my take on Grandma Gwen’s classic bacon and cheese omelet. I made a video in 2016, but I’ve refined the method since then. This updated version is simple, flavorful, and worth trying.

Why you’ll love this omelet

  • Easy to make: Omelets are a quick, satisfying breakfast—perfect when you want more than just eggs and a side.
  • Versatile: Eggs pair well with practically any meat, cheese, or vegetable. Use whatever you have on hand to customize your omelet.
  • All-in-one bite: Veggies, protein, and carbs come together in every forkful, so you get a balanced, tasty meal with minimal fuss.

Grandma Gwen’s Bacon & Cheese Omelet

When I was nine, my mom left us with my Grandma Gwen on alternate weekends. She loved to cook and always made a hearty, special breakfast. Her bacon and cheese omelets were my favorite—rich, comforting, and full of flavor.

Grandma Gwen also made vegetarian omelets with eggs, cheese, onions, spinach, and tomatoes. Those were great, too, but I always gravitated toward the meaty versions. Sometimes she used hot sausage instead of bacon, and every variation was delicious.

I adapted her recipe over the years, keeping the soul of her omelet while making a few tweaks to suit my tastes. This version is a tribute to her and the first omelet she taught me to make.

Inspiration from the diner

As I grew older, a local diner by my grandma’s house served one of the best omelets I ever had. Between that and my grandma’s cooking, I developed my own approach. Try this recipe and see if you don’t prefer it!

Ingredients you’ll need

  • Eggs: 2 large eggs.
  • Pork bacon: Crispy bacon adds salt, texture, and rich flavor.
  • Onions and peppers: Sauteed for depth and crunch. I like a mix of green and red for color and sweetness, but green alone works fine.
  • Mexican blend cheese: A blend of Cheddar, Monterey Jack, and melting cheeses works well—use any cheese that melts nicely.
  • Seasonings: Salt, garlic powder, and black pepper—simple but effective.
  • Vegetable oil: Use an oil with a high smoke point to cook the bacon and eggs.

How to make a bacon & cheese omelet

  1. Crack the eggs into a small mixing bowl.
  2. Add salt, garlic powder, and black pepper, then whisk until combined and set aside.
  3. Chop the onions and peppers into small pieces.
  4. Heat a skillet over medium-high heat and add the vegetable oil.
  5. After about 2 minutes, add the bacon, onions, and peppers. Fry for about 4 minutes, stirring the vegetables and flipping the bacon so it cooks evenly. Remove from the skillet and set aside.
  6. When the bacon has cooled slightly, break it into small pieces.
  7. Return the skillet to medium heat and pour in the whisked eggs.
  8. Evenly spread the bacon, onions, and peppers over the eggs.
  9. After about 2 minutes, sprinkle the cheese over the eggs so it starts to melt.
  10. Wait another 2 minutes, then use a spatula to fold one side of the egg over the other to form the omelet. Remove from heat and serve.

Tips for best results

  • Use two spatulas: Two spatulas make flipping the omelet easier and reduce the chance of breaking it.
  • Use a non-stick skillet: A good non-stick pan prevents sticking and tearing.
  • Add cheese at the right time: Add cheese once the eggs are mostly set so it melts without preventing the eggs from finishing cooking.

Add-ins & variations

  • Turkey bacon: A leaner alternative—watch cooking time to avoid overcooking.
  • Beef bacon: Flavorful if you want a different taste profile.
  • Ham: Thinly sliced and browned briefly before adding to the omelet.
  • Sausage: Cooked and crumbled hot or mild sausage also works well.
  • Spinach: For a lighter, vegetarian-friendly option, add spinach and tomatoes with mozzarella.
  • Tomatoes: Saute briefly like the peppers and onions to reduce excess moisture.
  • Mozzarella or Pepper Jack: Mozzarella melts beautifully and stretches; pepper jack adds a spicy kick.

What to serve with a bacon & cheese omelet

  • Grits: Creamy grits pair perfectly with the flavors in this omelet.
  • Home-fried potatoes: Potatoes fried with peppers and onions complement the omelet well.
  • Hash browns: Crispy hash browns are a delicious side.
  • Toast: Buttered toast or toast with jelly keeps the meal simple and satisfying.
