Each Weekly Menu Plan gathers delicious dinner recipes, side dishes, and a few desserts to inspire your meals and make the week run a little smoother—one recipe at a time.

Today is my son Josh’s 30th birthday. It’s hard to believe—he’s my firstborn, my baby—so where did the time go?
I remember turning 30 clearly. It wasn’t an easy milestone for me because I loved my twenties and wasn’t ready to move on. My husband made my cake that year read “Happy Thursday” because I didn’t want to celebrate turning 30. For the next decade the joke was that I stayed 29 again! We still laugh about it, and oh, what I wouldn’t give to be 30 again—30 certainly feels easier than 53 (lol)!
I hope you enjoy this week’s menu. The Slow Cooker Mongolian Chicken is a favorite—and perfect when you don’t want to heat up the oven. The creamy tacos have been a family staple for years. And if you love lemon, the lemon brownies are sure to win you over.
Have a wonderful weekend. I’d love to hear if you try any of these recipes—tag me on Instagram (@jodi_lud_5boysbaker) so I can see what you make.
