Ingredients
- 1.5 lbs Lean ground beef (use only lean ground beef)
- 12 pcs Bacon
- 1/4 tsp Seasoning salt
- 1/2 cup Cheddar cheese
- 1 clove Pressed garlic (1–2 cloves to taste)
- 2 large Eggs
- 1/2 tsp BBQ rub (mix of choice)
- 1 tsp Worcestershire sauce
- 1/4 cup Finely grated onion

Preheat the oven to 350°F (175°C).

Cut bacon slices to fit and line each muffin cup. Make sure bacon edges do not extend above the muffin tin rim.

In a large bowl, combine the eggs, seasoning salt, cheese, garlic, BBQ rub, Worcestershire and grated onion. Mix until well combined.

Add the ground beef and gently fold into the mixture. Avoid over-mixing to keep the meatloaf tender.

Divide the meat mixture into the prepared cups, about 1/4 cup per muffin, and press flat. Keep the mixture at or below the top of the tin to prevent drips. Place a sheet pan on the rack below if you’re concerned about drippings.
