BBQ Pulled Pork Quesadillas were last night’s leftover pork creation, and they’re an easy repeat whether you cook them in a skillet or on a Blackstone flat top griddle.
When I smoke a batch of BBQ pulled pork, there are usually plenty of leftovers to play with. Turning those leftovers into quesadillas is one of my favorite quick meals.

Besides quesadillas, I also used this pulled pork to make Smoked BBQ Pork Stuffed Jalapenos—another great leftover option.

How to make BBQ Pulled Pork Quesadillas
While quesadillas can be baked, I prefer cooking these in a large cast iron skillet or on a Blackstone griddle over medium to medium-low heat. A little oil in the pan helps the tortilla crisp up evenly.
Place a burrito-size flour tortilla in the pan. On one half, layer shredded cheese, pulled pork, and a drizzle of BBQ sauce.

I like adding pickled jalapeno slices and a bit more cheese on top for extra flavor and melt. Sweet pickled red onions are also excellent if you have them.
Fold the empty side of the tortilla over the filled half, then cook 1–2 minutes per side until the cheese melts and the tortilla is golden. If you’re lucky, some cheese will melt out and get crispy in the pan.

I typically use Monterey Jack, but sharp cheddar or a blend will work just as well.

Sour cream sauce to drizzle

For a bright, tangy finish I mix sour cream with a little chili powder and balsamic vinegar. It’s simple, creamy, and pairs nicely with the smoky BBQ flavors.

Ingredients
BBQ Pulled Pork Quesadillas
- cooking oil of choice
- 4 burrito size flour tortillas
- 3 to 4 cups shredded Monterey Jack cheese
- 3 cups leftover BBQ pulled pork
- 1/2 cup BBQ sauce
- 1/4 cup pickled jalapeno slices (optional)
Sour Cream Sauce
- 1/2 cup sour cream
- 1 tablespoon balsamic vinegar
- 1 teaspoon chili powder
Instructions
BBQ Pulled Pork Quesadillas

Heat a large skillet or griddle over medium-low and add a little cooking oil, spreading it evenly. Lay a tortilla flat in the pan (or lay all tortillas if using a griddle).

On one side of each tortilla, add some cheese, pulled pork, BBQ sauce, and jalapenos if desired, then a bit more cheese. Fold the empty side over the filling.

Cook 1–2 minutes per side until golden and the cheese is melted. Remove and repeat with remaining ingredients. Makes about 4 quesadillas. Serve with the sour cream sauce if you like. If using a griddle, you can cook them all at once.
Sour Cream Sauce

Stir sour cream, balsamic vinegar, and chili powder together until smooth. Drizzle over quesadillas or serve on the side.
