Frequently Asked Questions about Chicken Pie
How do I thicken the filling?
The flour in the filling thickens as the pie bakes. It can seem slightly runny immediately after baking, so allow the pie to cool for the inside to set and the gravy to thicken.
Can I bake this pie from frozen?
Yes. Bake at 325°F for about 60 to 80 minutes. If the crust browns too quickly, tent it with aluminum foil.
How do I seal the pie crust?
Pinch the edges of the top and bottom crusts together using your fingertips to form a seal. Make sure to cut vent holes in the top crust so steam can escape while baking.
How do you vent a pie?
Use a table or kitchen knife to cut evenly spaced slits in the top crust to allow steam to escape during baking.
What happens if you don’t vent a pie?
Without vents, steam can build up and cause the top crust to lift or the filling to leak out, which can make a mess in the oven.
Should I egg wash the pie?
An egg wash or a brush of heavy cream will give a nicely browned, glossy top. It’s optional but makes the pie look attractive.
Should I boil or fry the chicken?
Either method works. The important thing is to cook the chicken until very tender and easy to shred, without overcooking.
Can I freeze chicken pie?
Yes. Cool the pie completely, wrap it well in a freezer-safe package, and freeze for up to three months. Reheat from thawed or bake from frozen as noted above.
How long will chicken pie keep?
Stored in the refrigerator, this pie will keep for up to five days. Do not leave it at room temperature for more than two hours.
What to serve with chicken pie?
Keep the sides simple: steamed asparagus, roasted sweet potatoes, or corn. Finish the meal with brownies or another easy dessert.

TIPS AND TRICKS FOR EASY CHICKEN PIE
- This pie is great for office parties and holiday gatherings; if you use an aluminum deep-dish pan it fits easily in a large zip-top bag for transport.
- If you’re making it as a “take and toss” dish, choose a deep-dish aluminum pie pan for a little extra room.
- For food-safety and hygiene, avoid taking home a dirty disposable pan after a communal event.
- If gifting the pie, include reheating instructions: thaw, then reheat at 350°F for 30–45 minutes until heated through; cover with foil if the crust browns too quickly.
- You can substitute leftover turkey to make a delicious turkey pie.
- Batch-freezing several pies means you’ll always have an easy meal ready—serve with a salad or roasted vegetables.
- This recipe was adapted and updated from a handwritten collection of recipe cards and refined with current ingredient amounts and instructions.
The Chicken
- If using rotisserie chicken, use boxed chicken stock and whisk in the flour to make the gravy.
- White meat is commonly used, but thighs add extra flavor and tenderness.
- No need to pre-melt butter—small pieces are added to the pie so they melt during baking.

Ingredients
- 2 lbs chicken breast, cooked and cut into bite-sized pieces or shredded
- 2 refrigerated pie crusts
- 2 tbs flour
- ⅓ cup chicken stock
- ⅓ cup whole milk
- Salt and pepper to taste
- 2 tbs butter
- 1 beaten egg (for egg wash)
Instructions
-
Preheat the oven to 450°F. Press one pie crust into the bottom of a deep pie plate and crimp the edges. Scatter the shredded chicken evenly in the crust. Whisk together the flour, chicken stock, and milk until smooth, then pour over the chicken. Season with salt and pepper. Cut the butter into small pea-sized pieces and disperse them around the filling.
-
Unroll the second pie crust over the top, pinch the edges to seal, and cut vents in the top. Brush with the beaten egg for a golden finish.
-
Bake at 450°F for 20 minutes, then reduce the oven to 375°F and bake for an additional hour. Let the pie rest for 10 minutes before serving so the filling can set.
Notes
- Choose the chicken you prefer—white or dark meat both work, though many prefer white meat for this pie.
- The filling may be slightly watery in the crust at first; this is normal. Allow cooling time for the filling to firm up.
- Refrigerating the pie overnight can improve flavor, but the bottom crust may become softer.
- This is an excellent dish to bring to gatherings; use an aluminum deep-dish pan for easy transport.
- Include reheating instructions if gifting the pie: allow to thaw, then reheat at 350°F for 30–45 minutes until heated through; cover with foil if the crust is browning too quickly.
- Leftover turkey works beautifully in this recipe.
- Make several pies and freeze them for quick meals later—serve with a salad or roasted vegetables.

A VERSE TO SHARE
Thinking about patience reminded me that family life requires patience from everyone. The thing that holds us together is love. Without love, everything else falls short. This passage from 1 Corinthians resonates with that thought.
1 Corinthians 13:
If I speak in the tongues of men or of angels, but do not have love, I am only a resounding gong or a clanging cymbal…
And now these three remain: faith, hope and love. But the greatest of these is love.
