Breakfast Pizza: The Perfect Weekend Treat

Weekends are for leisurely, crowd-pleasing breakfasts and this Breakfast Pizza fits the bill. It brings together classic morning flavors—sausage gravy, scrambled eggs, bacon and plenty of cheese—on a crisp pizza crust. Serve it to guests, feed a hungry family, or cut into portions and freeze for easy mornings. I used to bring this to office meetings and it was always a hit; this homemade version is even more satisfying than the convenience-store variety.

Breakfast Pizza

Try it with fresh fruit and a hot cup of coffee for a complete breakfast.

Ingredients:

  • For the Pizza Crust:
  • 1 refrigerated pizza crust (1 can)
  • For the Gravy:
  • 1 lb breakfast sausage
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups half-and-half
  • Salt and pepper to taste
  • For the Scrambled Eggs:
  • 4 large eggs
  • 1 tablespoon milk
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Toppings:
  • 8 oz shredded mozzarella cheese
  • 1/2 lb cooked and crumbled bacon
  • 1/2 cup shredded sharp cheddar cheese

Instructions:

Preheat the oven to 425°F (220°C). Grease a 10 x 15-inch baking sheet, roll the pizza crust onto the pan, dock the dough with a fork and pre-bake for 5 minutes.

In a skillet over medium heat, brown the breakfast sausage, breaking it into small pieces as it cooks. Remove excess grease if desired. Add the butter and flour to the pan and cook, stirring, for 2–3 minutes to form a roux. Slowly whisk in the half-and-half and cook until the gravy thickens. Season with salt and pepper to taste. Keep warm.

Whisk the eggs with the milk. Melt the butter in a nonstick skillet over medium-low heat, add the egg mixture and gently scramble until just set but still creamy. Remove from heat to avoid overcooking.

Spread the sausage gravy evenly over the pre-baked crust. Top with shredded mozzarella, the scrambled eggs, crumbled bacon, and finish with the sharp cheddar. Bake in the preheated oven for 7–9 minutes, or until the cheese is melted and the crust is golden.

Notes

This pizza freezes well. Bake and cool completely, then cut into individual slices and separate with parchment paper. Store in a large freezer bag. Reheat slices in the microwave or air fryer until warmed through.
